The Yacon plant (Smallanthus sonchifolius) has reached in German-speaking countries with a warm and sunny climate a height of about 2 meters, in subtropical growing areas up to 3 meters. The plant forms tubers underground, in which it stores water and nutrients.
Ingredients, nutrition and health
The taste of the Yacon tuber is pleasantly sweet and comparable to melon or pear. Yacon mainly contains long-chain carbohydrates (fructooligosaccharides) that pass through the stomach and intestines without being broken down by the digestive enzymes. As a result, we taste the sweet taste of carbohydrates without absorbing their energy. The crisps are perfect as an addition in muesli or as a healthy snack. As a fine powder or syrup, Yacon is ideal as a sweetener for baked goods, desserts, smoothies, muesli, yoghurt and much more.
