Purple corn recipes
Chicha Morada
"Chicha Morada"
is a typical South American drink. Traditionally, it is prepared with whole purple corn cobs. Since these are almost impossible to buy in Germany, we use purple corn powder in our recipe, i.e. powdered purple corn kernels. Chicha Morada with ice cubes is a wonderful refreshment on hot summer days!
Ingredients:
1 heaped tablespoon of purple corn powder
1 stick of cinnamon
2 clove peel of a small half pineapple (unsprayed organic pineapple)
4 tablespoons of yacon syrup juice of a lime
Preparation:
- Put cloves, cinnamon stick and pineapple together with the purple corn powder and simmer in ½ liter of water in medium heat.
- Once the mixture has thickened a little, take it off the plate and let it cool.
- Shortly before serving, add the lime juice and yacon syrup

Dough
325 g flour
1 egg
115 g powdered sugar
125 g margarine
1 tbsp milk
Preparation:
- Strongly knead all ingredients into a dough.
- Place the dough in the fridge for 1 hour.
- Roll out the dough thinly and cut evenly into strips (approx. 0.5 cm x 3 cm)
- Bake at 175 ° C (top and bottom heat) approx. 10-15 minutes
Ingredients:
130 g icing sugar
juice of half a lemon
5 g purple corn powder
Preparation:
- Mix the ingredients for the icing together
- After cooling, dip the tips of the dough strips into the purple icing
